The meat is sourced from the coop’s own farm, primarily from free-range older cows, which explains the name. In the kitchen, the meat is expertly handled by butcher Viktor Vovchik, who manages the coop, and chef Lena Sakhnova, known for her work at the Yunost café. The team aims to transition to a daily schedule so that after a stroll along the slopes of Spaso-Andronikov Monastery and the embankments of the Yauza River, anyone can visit Staraya Korova for a serving of sausages, a jar of homemade canned meat, and other essential offerings.
