Born in 1977 in Lima, Peru. Studied at Le Cordon Bleu culinary academy. During his formative years, he worked at Lutèce (New York), Can Fabes (Sant Celoni), Astrid & Gastón (Bogotá and Madrid). In 2018, he opened a laboratory in the middle of the Andes, where he works with the local families to catalogue different crops. At different times, Martínez has opened projects in Lima, Cusco, London, Dubai, and Playa del Carmen.
