Simone Gobbi was born in the Italian town of Cesena. He decided to become a chef as a little boy, watching his mother and grandmother cook. As a teenager, Simone took jobs at the nearby hotel and restaurants, earning money for his studies. At different times, he has worked in the Italian restaurants Terre alte, Cracco, Carlo e Camilla, at Nolita in Paris, and at In Situ in California. He also apprenticed with chef Vincenzo Cammerucci. At the age of 26, Simone opened Note di gusto pizzeria in his native Cesena — and it continues to work to this day. He ended up in Moscow on an invitation to work at Ovo restaurant at Lotte Hotel. Simone first worked in the city with restaurateur Nicola Mavica, and then joined forces with Aram Mnatsakanov.
