Born in 1971 in the Italian city Aosta and studied to be a cook there. His parents dreamt of a banker's career for their son, but in 1988, Mirko got a job at one of the local restaurants. That was followed by jobs at the restaurants of Gstaad and Geneva in Switzerland, and Majorca. After returning to Italy, Mirko went to work at Petit Restaurant Hostellerie du Cheval Blanc in his native Aosta. That was followed by work at Petit Restaurant at the Grand Hotel Royal and Golf in Courmayeur, and at The Terrazza restaurant of Rome’s Eden Hotel. In 1993, the 22-year-old Mirko Zago apprenticed with chef Paolo Vai at Cavallo bianco restaurant. In 1998, he completed Commitment to Excellence course in restaurant business management at Rome's Eden Hotel. Chef de cuisine of Aist (Stork) and Onest restaurants.
