Dellos

Born in 1955 in Moscow. Studied to become a fine art restorer at an art school and a construction engineer at the Moscow Institute of Road Traffic. Completed UN language training courses. Between 1986 and 1991, Dellos lived and worked in France. In 1993, opened the Pilot club in Russia. In 1996 and 1997, opened the Bochka (Barrel) and Shinok (Tavern) restaurants that are still popular, in 1999 — Pushkin Café restaurant, in 2016 — Kazbek, and a year later — Matryoshka (Nesting Doll). Altogether, Maison Dellos restaurant group has 11 restaurants — nine in Moscow and two at Doha. Dellos is the Honorary member of the Russian Academy of Arts, and the Knight of the Legion of Honour.

How the guide is assembled

The guide only lists the establishments that were selected by its team. Collaborative approach to the selection is the guide’s fundamental stance, so all the establishments have been collectively approved by the majority.
The establishments selected for the guide are allocated to one of the categories — fine dining, smart casual, city café, and bar.
The guide offers a selection of useful search filters and the encyclopedia of restaurateurs and chefs to learn the names of the heroes behind the best restaurants.
