An excellent mix of traditional Georgian cuisine and infinite curiosity of Tbilisi-born chef Mamiya Dzhodzhua. There are canonical dishes such as the Adjarian khachapuri (a fluffy wide boat that you come to miss often), and there are the happy victims of experiments, such as the adjaruli with black truffle. A separate cause for joy is the menu item entitled “Pickles by mama Nana” (Mamiya’s mother), who keeps a tight rein on many food production processes and baking in particular.
