The delightful word “carniceria” translates to “butcher’s shop” from Italian. The name is somewhat playful, as the only elements reminiscent of a butcher’s shop are the premium cuts of meat and coolers filled with salami and sausages. Beyond that, it is a glamorous meat-focused restaurant with a minimalist interior, featuring white tiles, dark wood, picturesque hocks hanging from the ceiling, and other inviting details.

The establishment is the brainchild of Denis Bobkov, who has transformed the iconic Salt House, also known as the Gray House, on Solyanka Street into a hub of diverse eateries. The Salt House is famous for its historical salt cellars, and Bobkov has been developing them in a remarkable way, much to everyone’s delight.

The kitchen at Carniceria is helmed by chef Roman Palkin, who also oversees the neighboring Masa Madre, another GreatList venue. The menu is rooted in Argentinian culinary traditions of meat preparation, such as turnspit cooking (asador) and wood-fired stoves. Interestingly, to enter Carniceria, you must pass through Masa Madre, and on your way back, don’t miss the chance to grab a takeaway order of a dozen pieces of monkey bread––a true rarity in Moscow.
