Restaurant Jam

An intimate gastro bar with an open kitchen and relaxing atmosphere under the vaults of the former guards’ barracks in the Hideout quarter (next to St. Nicholas Cathedral of the Sea and the Mariinsky Theater). This is the first solo project of chef Vasily Bakanov (Commons, Gras), a big fan of the comfort food format, contemporary pickling techniques, and cross-cultural culinary style of the famous American chef David Chang.
The decisive successes of Jam’s debut menu include the croquette fritter with beef tongue, mustard, and cucumber jam, tartar with crumpled crisp potatoes, a whole perch baked in a Josper oven and served with vegetable caponata, and, of course, cannoli, an homage to the legendary cheesecake from Salone Pasta and Bar. Igor Loburtsev oversees the bar menu.
